I think you're underestimating how large Square-Enix has become. They have grown immensely in the last 5 years (since the addition of Enix)
I'm going to guess that they will make a remake, but won't start production until early 2008, once a few of their current projects are finished. Square-Enix loves to make money... there are a ton of threads like this all over the internet, the demand for a Final Fantasy 7 is high, and Square-Enix has even said (if we continue to see this kind of response, we'll definately consider it).
Graphics
Sound (orchestra)
Vincent and Yuffie are compulsory
Voice Acting
Script Upgrade
I agree with the above, however I don't think it should include anything related to the complilation... they need to keep the storyline exactly the way it was.
I think they should also expand the towns and cities, they were always very small. Also expand on the minigames a bit... add more chocobo types for breeding and more race tracks for racing. Even add multiplayer functionality for some of the minigames like snowboarding and chocobo racing.
