VII, VIII, X and XII have none of these elements. You could argue about the validity of nethicite, materia and spheres as being crystals, but because they have never been explicitly mentioned as crystals, they aren' the same thing.
Actually, XII does have Crystals, if you pay attention and go far enough in the story...

1) Save/Gate Crystals. Do I really need to explain these?

SPOILERS!

2) Deep within Giruvegan, you explore (Yes, you actually travel inside it.) a massive Crystal called the "Great Crystal" from which all other Crystals and Magicite are created.

3) The Sun-Cryst. Guess what the "Cryst" stands for.

END SPOILERS

And as for X...
I'm not certain, but didn't it say somewhere that the Spheres were cut from a Crystal? Maybe so, maybe not. I haven't played FFX in a while, so I don't know for sure. Let me know if it did or not.

And also, to Garland: It did have some influence on the later Mario RPGs. Such as the ability to pick a HP, FP, or Power Bonus when you level up. And the "Timed Hits" feature.
