Actually, XII does have Crystals, if you pay attention and go far enough in the story...
1) Save/Gate Crystals. Do I really need to explain these?

2) Deep within Giruvegan, you explore (Yes, you actually travel inside it.) a massive Crystal called the "Great Crystal" from which all other Crystals and Magicite are created.
3) The Sun-Cryst. Guess what the "Cryst" stands for.

And as for X...
I'm not certain, but didn't it say somewhere that the Spheres were cut from a Crystal? Maybe so, maybe not. I haven't played FFX in a while, so I don't know for sure. Let me know if it did or not.
And also, to Garland: It did have some influence on the later Mario RPGs. Such as the ability to pick a HP, FP, or Power Bonus when you level up. And the "Timed Hits" feature.
