I loved the FFVII,FFVIII,FFIX and FFVII:AC.Nobuo Uematsu was the best music composer for the FF games in my opinion.He's pieces are memorable.

X was my favourite soundtrack, but they are all so great...except for tactics advance...this is just for the ones I've played though, which is not as many as I would like.

I really don't have a favorite; I think they all are amazing, except maybe some of the later games.

This thread already ecists on the FF boards... But tracing the earlier posts, I can see that this was started back in the Ye OLDE forums days. Dumb old crackas, may they rot in the ground! xD JK
As I've stated before in a compelling argument, Crisis Core: Final Fantasy VII has the most satifying soundtrack available.
